Buffalo Chicken Quesadillas

When my middle sister was younger, she was quite the unique chef. You could always tell what her favorite foods were, because she would combine all of them into one meal. She plunged onward into the unknown realm of weird food combinations that people actually eat for enjoyment. Think adding Ranch dressing to spaghetti is different? Try combining hamburger pickles, olives, banana peppers, and hot sauce into the same recipe. Like I said…different.

The most important ingredient of all to her was hot sauce. Hot sauce on rice, hot sauce on chicken, hot sauce on pizza, etc. etc. Want her to eat her veggies? Add hot sauce. Luckily now she has moved on to become quite the culinary extraordinaire, leaving hot sauce for special occasions or spicy cravings. I can hear her sizzled tastebuds rejoicing.

This recipe is a tribute to her days of sugar, spice, let’s add it on rice. Just kidding. Actually it’s a tribute to what is in my pantry after realizing that it’s noon, I’m hungry, and I must eat this very moment.

The ingredients:The ingredientsSliced mozzarella cheese, a whole-wheat tortilla, hot sauce, a cooked chicken breast (I just cooked a frozen Tyson grilled chicken fillet because I don’t plan ahead very well), celery, and baby spinach.

You may be thinking, cheese? Really? But cheese gets a bad rap these days. Probably because there are so many recipes that use the mentality that more is better. In moderation, cheese can be a great source of calcium and protein and can help increase your satiety (another word for feeling full). Note, however, that not all cheeses are created equal.

Anyways, back to the recipe, because hungry people gotta eat. So basically I plopped down a tortilla in a skillet on the stovetop, added a couple slices of cheese, cut up chicken, a sliced celery stalk, and drizzled however much hot sauce I thought would be good.photo 2I’m always trying to look for ways to add more vegetables into my diet, so I even stuck in a few leaves of baby spinach.

photo 3Then fold the other lonely half of the tortilla over top the side that has friends, and turn the heat on to medium high heat.

photo 4Cook both sides till the tortilla gets a bit crispy and the cheese has melted all the good stuff together.

Some notes: this is a quesadilla is case you didn’t notice. You can add or subtract whatever you want to it. Maybe you want to plan ahead a bit and marinade some chicken in some ranch dressing seasoning or what not. Maybe you think blue cheese would taste better. It’s up to you! You can even add all your favorite foods together in the same meal like my sister did. Tell that tortilla who’s boss.

Buffalo Chicken Quesadillas

  • 1 whole wheat tortilla
  • 2 slices mozzarella cheese
  • 1 cooked chicken breast, chopped
  • 1 stalk of celery, sliced
  • Handful of baby spinach
  • 1 Tbs hot sauce
  1. Raid your pantry and gather your ingredients.
  2. In a skillet, lay down tortilla. Layer cheese, chicken, celery, hot sauce, and spinach.
  3. Fold tortilla in half and turn on stovetop to medium high heat.
  4. Cook both sides until cheese melted and tortilla has reached desired level of crispiness.

There, wasn’t that easy?
